Chicken Rice Casserole


1-1/2 lrg. Breasts of Chicken
1/2 C. Frozen Broccoli, allow to thaw a little
1 lrg. Cream of Chicken
1-1/2 C. Uncooked Rice
1-1/2 C. Water
1 sm. can chicken Broth
Salt & Pepper (desired)

Put uncooked rice in an 11-1/2x15-1/2 inch dish. Add chicken broth and 1/2 cup of water. (Add more later if necessary. Place in oven at 250 degrees while chicken is cooking.

Place chicken in a pot of water and allow to boil for 7-9 minutes. Once Rice has absorbed much of the liquid and looks done, take out of oven. Add a little more water if needed here but you want the rice to be ready and no liquids showing.

Cube the chicken and place in the the casserole dish. Mix in cream of chicken soup, frozen broccoli, and adding salt and pepper to taste. Once all well blended place in oven on 350 degrees for 30 minutes.

*Keep in mind broccoli can be optional.

This is so good when served with a bread bowl.
